  • 1 piece Zucchini (approximately 250g)
  • 3-4 tablespoons Oatmeal (gluten-free if needed)
  • 100 g Grated Cheese (your choice, such as cheddar or mozzarella)
  • 2 pieces Eggs
  • Salt (to taste)
  • Pepper (to taste)
  • Chives, finely chopped (for garnish)

Method
 

Preparation
  1. Grate the Zucchini: Start by grating the zucchini into a bowl using a box grater or food processor.
  2. Drain Excess Juice: Place the grated zucchini in a strainer, sprinkle some salt over it, and let it sit for about 10 minutes.
  3. Squeeze Out Remaining Juice: Use your hands to squeeze the grated zucchini thoroughly to remove as much juice as possible.
  4. Combine Ingredients: In a mixing bowl, combine the drained zucchini, oatmeal, grated cheese, eggs, and pepper. Add chopped chives and mix everything together until well combined.
  5. Preheat the Oven: While mixing, preheat your oven to 180 degrees C (360 degrees F).
Baking
  1. Transfer the mixture into a greased baking dish, spreading it evenly.
  2. Bake for 20 minutes or until the top is golden brown.
  3. Uncover and return to the oven for another 10 minutes to achieve a crispy top.

Notes

You can prepare the mixture a day in advance and store it in the refrigerator. This dish can be frozen for up to 3 months.
