- Grate the Zucchini: Start by grating the zucchini into a bowl using a box grater or food processor.
- Drain Excess Juice: Place the grated zucchini in a strainer, sprinkle some salt over it, and let it sit for about 10 minutes.
- Squeeze Out Remaining Juice: Use your hands to squeeze the grated zucchini thoroughly to remove as much juice as possible.
- Combine Ingredients: In a mixing bowl, combine the drained zucchini, oatmeal, grated cheese, eggs, and pepper. Add chopped chives and mix everything together until well combined.
- Preheat the Oven: While mixing, preheat your oven to 180 degrees C (360 degrees F).
Baking
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Bake for 20 minutes or until the top is golden brown.
- Uncover and return to the oven for another 10 minutes to achieve a crispy top.

You can prepare the mixture a day in advance and store it in the refrigerator. This dish can be frozen for up to 3 months.
