Ingredients
  

For the Cone Mixture
  • 340 grams walnuts about 12 oz; reserve 40 grams for chopping
  • 2 large egg whites
  • 130 grams granulated sugar about 0.65 cups
  • 30 grams cane sugar about 0.15 cups
  • 40 grams chocolate about 1.4 oz, chopped
  • 1 tablespoon almond essence
  • 1 pinch salt
  • 1 pinch baking soda
  • Powdered sugar for coating

Method
 

Preparation
  1. Begin by placing 300 grams of walnuts in your blender bowl. Add the granulated sugar and cane sugar.
  2. Blend the mixture well until it forms a fine powder. Transfer it to a mixing bowl.
  3. Add the almond essence to the walnut mixture.
  4. In a separate bowl, whip the egg whites until they form soft peaks. Gently fold the egg whites into the walnut mixture until well combined.
  5. Knead the dough briefly until it holds together.
  6. Coarsely chop the remaining 40 grams of walnuts and add them to the dough.
  7. Chop the chocolate into small pieces and add it to the bowl, along with a pinch of salt and baking soda. Mix everything thoroughly.
  8. Preheat your oven to 175 degrees Celsius and line a baking tray with baking paper.
Shaping and Baking
  1. Take a small amount of dough, approximately 30 grams, and shape it into small cones using your hands.
  2. Roll each cone in powdered sugar to coat the exterior, then place them on the prepared tray.
  3. Bake in the preheated oven for 10-12 minutes or until they are lightly golden.
  4. Once baked, remove the cones from the oven and let them cool completely on a wire rack.
  5. Arrange the cool Walnut Chocolate Cones on a serving dish and enjoy!
