Preparation
- Begin by placing 300 grams of walnuts in your blender bowl. Add the granulated sugar and cane sugar.
- Blend the mixture well until it forms a fine powder. Transfer it to a mixing bowl.
- Add the almond essence to the walnut mixture.
- In a separate bowl, whip the egg whites until they form soft peaks. Gently fold the egg whites into the walnut mixture until well combined.
- Knead the dough briefly until it holds together.
- Coarsely chop the remaining 40 grams of walnuts and add them to the dough.
- Chop the chocolate into small pieces and add it to the bowl, along with a pinch of salt and baking soda. Mix everything thoroughly.
- Preheat your oven to 175 degrees Celsius and line a baking tray with baking paper.
Shaping and Baking
- Take a small amount of dough, approximately 30 grams, and shape it into small cones using your hands.
- Roll each cone in powdered sugar to coat the exterior, then place them on the prepared tray.
- Bake in the preheated oven for 10-12 minutes or until they are lightly golden.
- Once baked, remove the cones from the oven and let them cool completely on a wire rack.
- Arrange the cool Walnut Chocolate Cones on a serving dish and enjoy!
