  • 500 g thin sliced chicken breast (about 1.1 lbs)
  • 50 g all purpose flour (1/3 cup)
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 1 clove minced garlic
  • 200 ml hot vegetable broth (about 0.85 cups)
  • 1 teaspoon capers (optional)
  • to taste Fresh chopped parsley
  • to taste Salt
  • to taste Black pepper

Method
 

Preparation
  1. Flour the chicken by dredging the chicken slices in flour and shaking off excess.
  2. Heat olive oil in a large pan over medium heat.
  3. Brown the chicken for 3 to 4 minutes per side, then remove from the pan and set aside.
Sauce and Final Cooking
  1. In the same pan, sauté the minced garlic for 1 minute until fragrant.
  2. Add the juice of the lemon and hot vegetable broth to the pan, deglazing it by scraping up any brown bits from the bottom.
  3. If desired, add capers to the pan and stir to combine.
  4. Return the browned chicken to the pan and cook in the sauce for an additional 5 minutes, turning once to coat evenly.
  5. Adjust seasoning with salt and black pepper according to your taste.
Serving
  1. Garnish with fresh chopped parsley and serve immediately with sides like steamed vegetables or a light salad.
