Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the rolled oats, shredded coconut, almond flour, baking soda, and salt until well combined.
- In another bowl, combine the melted coconut oil, applesauce, natural sweetener, and vanilla extract.
- Pour the wet ingredients into the dry mix. Stir until everything is fully incorporated.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Once baked, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
