Casserole Ingredients
  • 3 large large eggs, beaten approximately 150 g
  • 2 cups cottage cheese about 450 g
  • 10 ounce package frozen chopped spinach, thawed and very well drained approximately 280 g
  • 1/3 cup crumbled feta about 50 g
  • 1/3 cup diced sweet onion about 50 g
  • 1/4 cup melted butter approximately 60 g
  • 2 tablespoons freshly grated Parmesan about 15 g
  • 1/8 teaspoon black pepper about 0.5 g
  • 1/8 teaspoon garlic powder about 0.5 g
  • Dash nutmeg

Method
 

Preparation
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 1 and 1/2 quart (9-inch square) casserole dish and set aside.
  3. In a large bowl, combine the beaten eggs, cottage cheese, thawed spinach, crumbled feta, diced sweet onion, melted butter, Parmesan, black pepper, garlic powder, and a dash of nutmeg.
  4. Mix all the ingredients thoroughly until well combined.
  5. Transfer the mixture to the greased casserole dish.
Cooking
  1. Bake, uncovered, for approximately 40-45 minutes or until the center is nearly set.
  2. Allow the casserole to cool for 5-10 minutes before cutting.
Serving
  1. Serve and enjoy warm or at room temperature.

Notes

Spinach casserole pairs wonderfully with a fresh salad or can be enjoyed as a hearty side dish with roasted meats or seafood. Top with additional fresh herbs or a sprinkle of Parmesan cheese before serving. Leftovers can be reheated or enjoyed cold.
