Preparation
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 and 1/2 quart (9-inch square) casserole dish and set aside.
- In a large bowl, combine the beaten eggs, cottage cheese, thawed spinach, crumbled feta, diced sweet onion, melted butter, Parmesan, black pepper, garlic powder, and a dash of nutmeg.
- Mix all the ingredients thoroughly until well combined.
- Transfer the mixture to the greased casserole dish.
Cooking
- Bake, uncovered, for approximately 40-45 minutes or until the center is nearly set.
- Allow the casserole to cool for 5-10 minutes before cutting.
Serving
- Serve and enjoy warm or at room temperature.
Notes
Spinach casserole pairs wonderfully with a fresh salad or can be enjoyed as a hearty side dish with roasted meats or seafood. Top with additional fresh herbs or a sprinkle of Parmesan cheese before serving. Leftovers can be reheated or enjoyed cold.
