Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, baking powder, and salt. Stir them well.
- In another bowl, whisk together the eggs and add the olive oil, mixing thoroughly.
- Pour the wet ingredients into the dry ingredients and stir until smooth.
- Gently fold in the mozzarella cheese, sun-dried tomatoes, spinach, garlic powder, and onion powder.
Baking
- Drop spoonfuls of the mixture onto the prepared baking sheet, spacing each biscuit about 2 inches apart.
- Bake for 15-20 minutes, or until the biscuits turn golden brown.
- Let the biscuits cool slightly on the baking sheet before serving.
Notes
These biscuits are great on their own or paired with fresh fruit, salad, or as part of a brunch spread. Best served with a dipping sauce.
