Ingredients
  

For the apple filling
  • 5 medium medium apples, sliced between 1/8" and 1/4" thick (744 grams sliced) A mix of tart and sweet apples like Granny Smith and Honeycrisp is recommended.
  • 1 tbsp lemon juice
  • 3 tbsp all-purpose flour (21 grams)
  • 1/3 cup light brown sugar, packed (73 grams)
  • 1 tbsp cinnamon (7 grams)
  • 3/8 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves
  • pinch of salt
For the crust/topping
  • 1 and 1/2 cups salted butter, melted (340 grams, or 24 tbsp)
  • 3 cups all-purpose flour, spooned & leveled or weighed out (390 grams)
  • 2 cups old-fashioned whole rolled oats (195 grams)
  • 1 and 1/2 cups light brown sugar, packed (330 grams)
  • 1 and 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup granulated sugar (210 grams)
For the salted caramel sauce
  • 6 tbsp salted butter, cubed (85 grams)
  • 1/2 cup heavy cream (135 grams) Plus an extra 1 tbsp
  • pinch of fine sea salt

Method
 

Preparation
  1. Preheat your oven to 350℉ (180℃). Spray a 9x13 pan with nonstick spray and line with parchment paper, leaving an overhang on the ends.
  2. In a medium bowl, toss the sliced apples with lime juice, flour, brown sugar, cinnamon, nutmeg, allspice, ground cloves, and a pinch of salt. Stir gently and set aside.
Crust/Topping
  1. In a large bowl, melt the salted butter. Stir in flour, oats, brown sugar, baking soda, cinnamon, salt, and granulated sugar.
  2. Reserve 2 cups of the crust mixture for topping and press the rest into the prepared pan.
Assembly and Baking
  1. Spoon the apple mixture evenly over the crust, leaving behind any excess liquid.
  2. Sprinkle the reserved crust mixture on top.
  3. Bake for 38 to 45 minutes until the topping is golden and apples are tender.
Serving
  1. Allow the bars to cool on a wire rack for about 1-2 hours before slicing.
  2. Slice and drizzle with salted caramel before serving.
  3. Store in an airtight container in the fridge for 3-4 days.

Notes

Caramel can be made up to 3 days ahead and stored in the refrigerator. Bars can be made ahead, cooled at room temperature, and then refrigerated until serving. They can be enjoyed warm, at room temperature, or cold.
