Preparation
- Preheat the oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
- Heat the oil in a skillet over medium heat, then add the diced onion and cook for 5 minutes, until soft.
- Clear the center of the pan and add the ground pork. Cook, stirring constantly, until the pork is completely browned, about 10 minutes.
- Add the oregano, garlic powder, salt, and black pepper, then stir to combine. Remove the skillet from the heat and set aside to cool slightly for 5 minutes.
Mixing the Dough
- In a large bowl, whisk together the almond flour, coconut flour, and baking powder.
- Add the beaten eggs, cheddar cheese, chopped roasted red peppers, and the cooled pork mixture to the flour mix. Use a spatula to fully incorporate the ingredients, being careful not to overmix.
Baking
- Use a large cookie scoop or spoon to form 12 to 14 evenly sized balls of dough and place them on the prepared baking sheet.
- With lightly oiled hands, press down gently on the top of each ball to shape them into biscuits.
- Bake the biscuits in the preheated oven for 8 to 10 minutes, until they are firm and lightly browned on the outside.
- Remove the biscuits from the oven and use a finger to create a small depression in the center of each.
- Add about 1 tablespoon of goat cheese to each indent and return to the oven. Bake for an additional 3 to 5 minutes, until the goat cheese has melted slightly and the biscuits are crisp and browned.
- Remove from the oven and allow the biscuits to cool completely on the sheet pan.
Notes
These biscuits can be served warm or at room temperature. For a gourmet touch, drizzle with balsamic glaze or serve with a dollop of Greek yogurt. They freeze well for up to 3 months.
