Ingredients
  

For the crust
  • 30 g 1/4 cup + 2 teaspoons vital wheat gluten
  • 35 g 1/4 cup + 1 teaspoon all-purpose or bread flour
  • 1.5 g 1/4 teaspoon salt
  • 4 g 1 teaspoon baking powder
  • 1 g 1/4 teaspoon garlic powder
  • 1 g 1/4 teaspoon onion powder
  • 10 g 1 tablespoon nutritional yeast
  • 5 ml 1 teaspoon apple cider vinegar
  • 120 ml 1/2 cup water
For the topping
  • 60 ml 1/4 cup tomato or marinara sauce
  • 30 g 1/4 cup vegan mozzarella

Method
 

Preparation
  1. Preheat the oven to 425 degrees F (218 degrees C).
  2. In a medium-sized bowl, whisk together the dry ingredients: vital wheat gluten, all-purpose flour, baking powder, salt, onion powder, garlic powder, and nutritional yeast.
  3. Add the water and apple cider vinegar to the dry mixture, then mix until a wet dough forms.
  4. Transfer the dough to a lightly greased eighth sheet pan. Use the back of a spoon to spread it out evenly across the pan.
  5. Bake the crust in the preheated oven for 5 minutes.
  6. Remove the crust from the oven and carefully add your desired tomato or marinara sauce over the top, followed by the vegan mozzarella cheese.
  7. Return the pizza to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Notes

Serve your protein pizza hot, sliced into wedges. Pair it with a fresh side salad or homemade vegan dips. For added flavor, experiment with toppings like sautéed vegetables or fresh herbs.
