Preparation
- Begin by peeling the potatoes and carrots. This step is crucial for ensuring that your patties have a smooth texture.
- Place the peeled potatoes in a pot filled with salted water. Bring it to a boil and cook the potatoes for about 20 minutes, or until they are tender.
- While the potatoes are cooking, grate the carrot and bell pepper. Also, finely chop the spring onions.
- Once the potatoes are cooked, drain them and place them in a large mixing bowl. Mash them until they reach a smooth puree consistency.
- Add the grated carrot, bell pepper, and spring onions to the mashed potatoes. Beat the egg separately and mix it in along with the salt and black pepper. Combine everything well.
- Gradually add the flour to the mixture until you achieve a medium consistency dough. If the mixture feels too wet, sprinkle in a little more flour.
- With slightly wet hands, take portions of the mixture and form small patties.
Cooking
- Heat oil in a pan over medium heat. Once the oil is hot, carefully place the patties in the pan.
- Fry them for about 3 to 4 minutes on each side, or until they turn golden brown.
- After frying, remove the patties from the pan and place them on absorbent paper to soak up any extra oil.
Serving
- Enjoy your Potato and Vegetable Patties hot, garnished with fresh chopped parsley or accompany them with your favorite dipping sauce.
Notes
These patties are incredibly versatile when it comes to serving! You can enjoy them on their own or pair them with a refreshing side salad.
