Ingredients
  

Cake Batter
  • 2 eggs 2 large eggs Large size
  • pinch Pinch of salt
  • 60 grams 60 grams (1/3 cup) of sugar
  • 10 grams 10 grams (1 tablespoon) of vanilla sugar
  • 60 grams 60 grams (1/4 cup) of butter (melted)
  • 130 grams 130 grams (1/2 cup) of yogurt
  • 150 grams 150 grams (1 1/4 cups) of flour
  • 1 packet (7 grams) 1 packet of baking powder
Plum Topping
  • 10 plums 10 plums (about 2 cups, pitted and halved)
  • 1 tablespoon 1 tablespoon of sugar
  • 2 tablespoons 2 tablespoons of flour
  • 40 grams 40 grams (3 tablespoons) of butter (cut into pieces)

Method
 

Preparation
  1. Beat the eggs with a pinch of salt in a mixing bowl until foamy.
  2. Gradually add the granulated sugar and vanilla sugar, beating continuously until the mixture is pale and fluffy.
  3. Pour in the melted butter and yogurt, then mix thoroughly until combined.
  4. In a separate bowl, mix the flour with baking powder and sift it to avoid lumps.
  5. Gently fold the dry mixture into the egg mixture until smooth.
  6. Line a pan suitable for a hot air fryer with baking paper, then pour the cake batter into the pan evenly.
  7. Wash and cut the plums in half, removing the pits. Arrange the plum halves evenly spaced in the batter.
  8. In another bowl, mix 2 tablespoons of flour, 1 tablespoon of sugar, and the cold butter pieces. Use your fingers to crumble the mixture until it resembles wet sand.
  9. Sprinkle the crumb mixture evenly over the plums.
Baking
  1. Preheat the hot air fryer to 160 degrees Celsius (320 degrees Fahrenheit).
  2. Bake the cake for approximately 25 minutes or until the pastry is golden brown and a toothpick comes out clean.
  3. Once baked, remove the cake from the air fryer and let it cool slightly before slicing. Enjoy!

Notes

Serve warm or at room temperature with a dusting of powdered sugar and a dollop of whipped cream or vanilla ice cream. Garnish with mint leaves or caramel sauce for special occasions.
