  • 1 cup Milk of choice Dairy or plant-based is fine.
  • 1/2 cup Greek yogurt For a creamy, tangy lift.
  • 2 tablespoons Chia seeds These help thicken the oats.
  • 1 cup Fresh or canned peaches, diced small Using ripe peaches is preferred.
  • 1 tablespoon Honey or maple syrup Sweetener to taste.
  • 1 pinch Cinnamon Add if desired.
  • 1 teaspoon Vanilla extract Enhances the dessert-like flavor.

Method
 

Preparation
  1. Chop ripe peaches, leaving skins on if desired.
  2. In a jar or bowl, mix oats, chia seeds, yogurt, milk, vanilla, and cinnamon.
  3. Add most of the chopped peaches to the mixture.
  4. Pour in your sweetener (honey or maple syrup) and mix well.
  5. Seal the jar or cover the bowl and refrigerate overnight, or for at least 3 hours.
Serving
  1. In the morning, stir the oats and check for consistency.
  2. Top with remaining chopped peaches or a dollop of yogurt if desired.

Notes

These oats are best when allowed to refrigerate overnight for a creamy texture. Variations can include adding nuts or other fruits like raspberries.
