Preparation
- Preheat your oven to 180°C (360°F) and lightly grease or line a small loaf pan or a 6-inch (15 cm) round baking dish.
- In a large bowl, mash the 2 bananas thoroughly until they form a smooth paste.
- Whisk in the 2 eggs and 150 ml of milk until well combined.
- Stir in the 1 cup of oatmeal and let the mixture sit for about 5 minutes to allow the oats to absorb some moisture.
Mixing Ingredients
- Add the 1 tablespoon of baking powder and 1 tablespoon of vanilla sugar (or sugar substitute) to the banana-oat mixture and mix well.
- Fold in the 4 tablespoons of raisins.
Adding Apple
- Peel and finely grate or chop the 1 apple, then gently fold it into the cake batter until evenly distributed.
Baking
- Pour the cake batter into your prepared pan.
- Bake in the preheated oven for approximately 40 minutes.
- Check if done by inserting a toothpick into the center; it should come out clean.
- Allow to cool in the pan for 10 minutes before transferring to a cooling rack.
Notes
This cake is high in fiber and relies on the natural sweetness of bananas and apples for flavor, making it a great addition to a balanced diet.
