Ingredients
  

Wet Ingredients
  • 2 large Bananas Mashed until smooth
  • 150 ml Milk (Any kind) Approximately 2/3 cup
  • 2 large Eggs
Dry Ingredients
  • 1 cup Oatmeal (Rolled or Quick Oats) (90-100 g)
  • 1 tablespoon Baking Powder (15 g)
  • 1 tablespoon Vanilla Sugar Option to substitute with 1 tsp vanilla extract + 1 tbsp erythritol or stevia
  • 4 tablespoons Raisins (approximately 60 g)
  • 1 medium Apple Peeled and grated or chopped

Method
 

Preparation
  1. Preheat your oven to 180°C (360°F) and lightly grease or line a small loaf pan or a 6-inch (15 cm) round baking dish.
  2. In a large bowl, mash the 2 bananas thoroughly until they form a smooth paste.
  3. Whisk in the 2 eggs and 150 ml of milk until well combined.
  4. Stir in the 1 cup of oatmeal and let the mixture sit for about 5 minutes to allow the oats to absorb some moisture.
Mixing Ingredients
  1. Add the 1 tablespoon of baking powder and 1 tablespoon of vanilla sugar (or sugar substitute) to the banana-oat mixture and mix well.
  2. Fold in the 4 tablespoons of raisins.
Adding Apple
  1. Peel and finely grate or chop the 1 apple, then gently fold it into the cake batter until evenly distributed.
Baking
  1. Pour the cake batter into your prepared pan.
  2. Bake in the preheated oven for approximately 40 minutes.
  3. Check if done by inserting a toothpick into the center; it should come out clean.
  4. Allow to cool in the pan for 10 minutes before transferring to a cooling rack.
