  • 1 cup pitted Medjool dates Use soft, gooey dates.
  • 1 cup mixed nuts (almonds & walnuts recommended) Feel free to use any nuts you have.
  • 1 cup rolled oats Oats are optional for a gluten-free version.
  • 1/2 cup natural nut butter (peanut or almond) Choose your favorite nut butter.
  • 1 pinch sea salt Enhances flavors.
Optional Add-Ins
  • 1/2 cup shredded coconut For a coconut flavor.
  • 1/2 cup dark chocolate chips Add for chocolate lovers.
  • 1 teaspoon cinnamon For an extra spice kick.
  • 1 tablespoon maple syrup Optional sweetness.

Method
 

Preparation
  1. In a food processor, combine the pitted dates and mixed nuts. Pulse until sticky but not completely mushy.
  2. Scrape down the sides and add the oats, nut butter, salt, and any optional add-ins. Process until the mixture is clumpy and dough-like.
  3. Using a spoon, scoop out small portions and roll them into balls using your hands. Aim for walnut-sized.
  4. Place the rolled balls onto a baking sheet lined with parchment paper (or a plate) and chill in the fridge for 20-30 minutes.

Notes

These energy balls can be customized with various nuts, nut butters, and additional add-ins. Store them in an airtight container in the fridge for up to a week or freeze for longer storage.
