Preparation
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the diced apples, brown sugar, ground cinnamon, nutmeg, allspice, ground ginger, and a pinch of salt. Add the unsalted butter and vanilla extract. Mix everything well until the apples are evenly coated.
- Add the cornstarch slurry to the apple mixture and stir until fully combined.
- Lightly dust your workspace with all-purpose flour. Roll out the premade pie dough until it's about 1/8 inch thick. Cut small circles (about 4-5 inches in diameter) using a cookie cutter or a glass.
Assembly
- Place a spoonful of the apple mixture into the center of each dough circle.
- Fold the dough over the filling to create a half-moon shape. Press down the edges with a fork to seal them.
- In a small bowl, mix the beaten egg with milk, cream, or water. Brush this mixture over the tops of the pies.
- Sprinkle coarse brown sugar on top for added sweetness.
Baking
- Place the mini apple pies on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
