Ingredients
  

For the filling
  • 2 medium Medium Apples, peeled, cored, and diced (about 300g)
  • cup Brown Sugar (67g)
  • 1 tsp Ground Cinnamon
  • ¼ tsp Ground Nutmeg
  • ¼ tsp Allspice
  • ¼ tsp Ground Ginger
  • 1 pinch Salt
  • 1 tbsp Unsalted Butter
  • 1 tsp Vanilla Extract
  • 1 tbsp Cornstarch Slurry (mix 1 tbsp cornstarch with 1 tbsp water)
For the crust
  • 1 package Premade Pie Dough (contains 2 crusts)
  • all-purpose flour All-purpose Flour (for dusting)
  • 1 beaten Egg (for egg wash)
  • 1 tbsp Milk, Cream, or Water (for egg wash)
  • coarse brown sugar Additional Coarse Brown Sugar (for sprinkling)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the diced apples, brown sugar, ground cinnamon, nutmeg, allspice, ground ginger, and a pinch of salt. Add the unsalted butter and vanilla extract. Mix everything well until the apples are evenly coated.
  3. Add the cornstarch slurry to the apple mixture and stir until fully combined.
  4. Lightly dust your workspace with all-purpose flour. Roll out the premade pie dough until it's about 1/8 inch thick. Cut small circles (about 4-5 inches in diameter) using a cookie cutter or a glass.
Assembly
  1. Place a spoonful of the apple mixture into the center of each dough circle.
  2. Fold the dough over the filling to create a half-moon shape. Press down the edges with a fork to seal them.
  3. In a small bowl, mix the beaten egg with milk, cream, or water. Brush this mixture over the tops of the pies.
  4. Sprinkle coarse brown sugar on top for added sweetness.
Baking
  1. Place the mini apple pies on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  2. Let the mini apple pies cool slightly before serving.

Notes

Serve with powdered sugar, vanilla ice cream, or whipped cream. Drizzle warm caramel sauce over for a delicious twist. These mini pies are perfect for gatherings or cozy evenings at home. You can prepare the filling a day in advance.
