  • 2 large Eggs Large eggs are recommended for binding.
  • 2/3 cup Milk Can use any type of milk.
  • 32 pieces Ritz wafers, crushed Crushed for binding and flavor.
  • 1/2 cup Onion, chopped Provides moisture and flavor.
  • 4 ounces Shredded sharp cheddar cheese For additional flavor.
  • 1 teaspoon Salt To taste.
  • 1/4 teaspoon Pepper To taste.
  • 1 1/2 lbs Ground beef Can use lean ground beef if preferred.
Glaze Ingredients
  • 1/2 cup Ketchup Forms the base of the glaze.
  • 1/2 cup Brown sugar Adds sweetness to the glaze.
  • 1 teaspoon Mustard Enhances the flavor of the glaze.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan. Set it aside.
  2. In a large mixing bowl, beat the eggs and milk together until well combined.
  3. Add the crushed Ritz wafers, chopped onion, shredded cheddar cheese, salt, and pepper to the egg and milk mixture. Mix until all ingredients are evenly distributed.
  4. Gently combine the ground beef with the cracker mixture until just mixed. Avoid overmixing to prevent a tough meatloaf.
  5. Transfer the meatloaf mixture to the greased loaf pan, pressing it down firmly to form an even loaf shape.
  6. In a small bowl, mix together the ketchup, brown sugar, and mustard to create the glaze. Spread the glaze evenly over the top of the meatloaf.
Cooking
  1. Bake the meatloaf in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C) and the top is caramelized and golden brown.
  2. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.

Notes

For serving, slice the meatloaf and pair it with mashed potatoes and green beans, or serve in a sandwich. Leftovers store well in an airtight container for up to 3 days, and can be frozen for up to 3 months.
