Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan. Set it aside.
- In a large mixing bowl, beat the eggs and milk together until well combined.
- Add the crushed Ritz wafers, chopped onion, shredded cheddar cheese, salt, and pepper to the egg and milk mixture. Mix until all ingredients are evenly distributed.
- Gently combine the ground beef with the cracker mixture until just mixed. Avoid overmixing to prevent a tough meatloaf.
- Transfer the meatloaf mixture to the greased loaf pan, pressing it down firmly to form an even loaf shape.
- In a small bowl, mix together the ketchup, brown sugar, and mustard to create the glaze. Spread the glaze evenly over the top of the meatloaf.
Cooking
- Bake the meatloaf in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C) and the top is caramelized and golden brown.
- Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
Notes
For serving, slice the meatloaf and pair it with mashed potatoes and green beans, or serve in a sandwich. Leftovers store well in an airtight container for up to 3 days, and can be frozen for up to 3 months.
