Preparation
- Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit).
- In a large bowl, mix all the dry ingredients except for the flour: sugar, baking powder, cinnamon, and vanilla.
- In a separate bowl, combine the juice and the 50 ml of vegetable oil. Gradually add this mixture to the dry ingredients.
- Sift the flour into the mixture slowly while whisking thoroughly until the batter is smooth.
- Wash the apples, slice them thinly, and gently fold them into the batter. Let the mixture sit for about 10 minutes.
Baking
- Grease an ovenproof dish with oil and pour in the batter.
- Bake for around 30 minutes, covering with foil if the apples start to brown too quickly.
- Prepare the caramel crust by mixing the 100 ml of vegetable oil with 1 teaspoon of sugar. Once the pie is out of the oven, pour this mixture on top and return to the oven for another 10-15 minutes or until golden brown.
Serving
- Serve warm or let it cool and serve it chilled. Garnish with mint leaves or a scoop of ice cream.
Notes
For serving, dust the top with powdered sugar or add a dollop of whipped cream/ice cream. Pair with spiced tea or warm cider for a comforting combination.
