Ingredients
  

For the shrimp
  • 1 pound peeled shrimp (medium or large) Frozen shrimp can be used, thawed under cool water.
  • 2 tablespoons olive oil For marinating the shrimp.
  • 2 tablespoons fresh lemon juice Freshly squeezed for best flavor.
  • 2 tablespoons chopped fresh herbs (parsley and dill recommended) Basil can be used as an alternative.
  • 1 clove garlic (crushed) For added flavor.
For grilling
  • 4 skewers wooden or metal skewers If using wooden skewers, soak them in water beforehand.

Preparation
  1. If using frozen shrimp, thaw them under cool water.
  2. In a bowl, mix the olive oil, lemon juice, chopped herbs, and crushed garlic.
  3. Toss the shrimp in the marinade and let them sit for up to 20 minutes.
  4. Thread the shrimp onto skewers, leaving space between each shrimp.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Grill the shrimp skewers for about 2 minutes on each side, or until opaque with grill marks.
Serving
  1. Squeeze fresh lemon juice over the shrimp before serving.

Notes

Avoid over-marinating shrimp to prevent a rubbery texture. Use fresh herbs for the best flavor, or dried herbs in smaller amounts if necessary. Serve with rice, bread, or salad for a full meal.
