- In a skillet, heat the olive oil over medium heat. Add the chopped onions and bell peppers, and sauté until they are softened, about 3-4 minutes.
- Add the ground beef to the skillet. Season with salt and pepper. Cook until browned and fully cooked, stirring occasionally.
- Remove the skillet from heat. Stir in the shredded cheese until it’s melted and well combined with the beef and vegetables.
- Spoon the beef and cheese mixture onto the low-carb wraps or lettuce leaves.
- Roll them tightly and serve warm.
Notes
For extra flavor, add smoked paprika or Worcestershire sauce into the beef mixture. You can also include sliced mushrooms or jalapeños. Leftover filling can be stored in the fridge and used later for a snack or breakfast.
