Ingredients
  

Nuts and Seeds
  • 100 grams Peanuts About 3.5 oz
  • 50 grams Walnuts About 1.8 oz
  • 50 grams Almonds About 1.8 oz
  • 30 grams Pumpkin Seeds About 1 oz
  • 40 grams Sunflower Seeds About 1.4 oz
  • 1 tablespoon Sesame Seeds
  • 1 tablespoon Poppy Seeds
  • 1 tablespoon Flaxseed
Wet Ingredients
  • 1 tablespoon Natural Honey Maple syrup can be used as a vegan alternative.
  • 1 medium Egg White

Method
 

Preparation
  1. Preheat your oven to a moderate temperature of 180°C (350°F).
  2. In a food processor, combine peanuts, walnuts, almonds, pumpkin seeds, sunflower seeds, sesame seeds, poppy seeds, and flaxseed. Pulse the mixture until it becomes coarse.
  3. Add the egg white and natural honey to your mixture. Blend again until everything is well combined, and you have a sticky dough.
  4. Using your hands, shape the dough into cookie-sized portions and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until the cookies turn golden brown and firm to touch.
  2. Allow the cookies to cool on the baking sheet before enjoying.

Notes

These cookies can stay fresh for a week at room temperature or longer if refrigerated. For added flavor, consider mixing in cinnamon or vanilla extract.
