Preparation
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan to prevent sticking.
- In a large bowl, combine the rolled oats, grated apples, unsweetened applesauce, honey (or maple syrup), and vanilla extract. Mix until well blended.
- In a separate bowl, mix the baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined. If using nuts, fold them in gently.
- Pour the batter into the prepared cake pan and smooth the top for even baking.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for a few minutes before slicing and serving.
Notes
Serve warm with Greek yogurt for added protein, or dust with powdered sugar for a beautiful presentation. Leftovers can be stored in an airtight container at room temperature for up to three days or refrigerated for longer freshness.
