  • 2 cups rolled oats
  • 1 cup grated apples About 1-2 medium apples, grated.
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup Choose based on personal preference.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional) Such as walnuts or pecans.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan to prevent sticking.
  2. In a large bowl, combine the rolled oats, grated apples, unsweetened applesauce, honey (or maple syrup), and vanilla extract. Mix until well blended.
  3. In a separate bowl, mix the baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined. If using nuts, fold them in gently.
  4. Pour the batter into the prepared cake pan and smooth the top for even baking.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool for a few minutes before slicing and serving.

Notes

Serve warm with Greek yogurt for added protein, or dust with powdered sugar for a beautiful presentation. Leftovers can be stored in an airtight container at room temperature for up to three days or refrigerated for longer freshness.
