Dry Ingredients
  • 1 cup rolled oats 90g
  • 1/2 cup mixed nuts (cashews, almonds, walnuts), roughly chopped 75g
  • 1/4 cup pumpkin seeds 30g
  • 2 tbsp chia seeds
  • 2 tbsp flaxseeds
  • 1/2 cup dried cranberries (or raisins) 70g
  • 1/2 tsp cinnamon
  • pinch salt
Wet Ingredients
  • 1/4 cup natural peanut butter or almond butter 85g
  • 1/4 cup honey or maple syrup 70g
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and a pinch of salt.
  3. In a small saucepan over low heat, melt the peanut butter (or almond butter) and honey (or maple syrup) together until smooth. Remove from heat and stir in the vanilla extract.
  4. Pour the warm wet mixture over the dry ingredients and stir until fully coated.
  5. Using a cookie scoop or spoon, form the mixture into balls and place them on the baking sheet, gently flattening each into a cookie shape.
Baking
  1. Bake in the preheated oven for 12-15 minutes or until golden and firm.
  2. Once baked, allow the cookies to cool completely on a wire rack.

Notes

These cookies are versatile and can be enjoyed on their own, with yogurt, or alongside fresh fruit. Customize your nuts and adjust sweetness as desired for a personal touch. Store in an airtight container for up to a week or freeze for longer storage.
