Preparation
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and a pinch of salt.
- In a small saucepan over low heat, melt the peanut butter (or almond butter) and honey (or maple syrup) together until smooth. Remove from heat and stir in the vanilla extract.
- Pour the warm wet mixture over the dry ingredients and stir until fully coated.
- Using a cookie scoop or spoon, form the mixture into balls and place them on the baking sheet, gently flattening each into a cookie shape.
Baking
- Bake in the preheated oven for 12-15 minutes or until golden and firm.
- Once baked, allow the cookies to cool completely on a wire rack.
