Preparation
- Soak the Dried Apricots in cold water for about 15-20 minutes until soft, then drain.
- Chop the walnuts, hazelnuts, almonds, and pine nuts.
Mixing
- In a mixing bowl, combine the chopped nuts with pumpkin seeds, sunflower seeds, sesame seeds, and flaxseed.
- Add the soaked and drained dried apricots and the natural honey to the mixture. Mix everything well.
- Incorporate the egg white and a pinch of salt into the mixture. Stir until combined.
Baking
- Line a baking sheet with parchment paper. Scoop portions of the mixture onto the sheet to form cookies.
- Bake in a preheated oven at 180°C (360°F) for 15-20 minutes or until golden brown.
Cooling
- Once baked, let cookies cool on a wire rack before serving.
