Ingredients
  

Dry Ingredients
  • 70 g Dried Apricots Soaked in water before use
  • 50 g Walnuts, chopped
  • 70 g Hazelnuts, chopped
  • 30 g Pumpkin Seeds
  • 40 g Sunflower Seeds
  • 20 g Sesame Seeds
  • 20 g Flaxseed
  • 60 g Almonds, chopped
  • 20 g Pine Nuts
Wet Ingredients
  • 40 ml Natural Honey
  • 1 large Egg White
  • 1 pinch Salt

Method
 

Preparation
  1. Soak the Dried Apricots in cold water for about 15-20 minutes until soft, then drain.
  2. Chop the walnuts, hazelnuts, almonds, and pine nuts.
Mixing
  1. In a mixing bowl, combine the chopped nuts with pumpkin seeds, sunflower seeds, sesame seeds, and flaxseed.
  2. Add the soaked and drained dried apricots and the natural honey to the mixture. Mix everything well.
  3. Incorporate the egg white and a pinch of salt into the mixture. Stir until combined.
Baking
  1. Line a baking sheet with parchment paper. Scoop portions of the mixture onto the sheet to form cookies.
  2. Bake in a preheated oven at 180°C (360°F) for 15-20 minutes or until golden brown.
Cooling
  1. Once baked, let cookies cool on a wire rack before serving.

Notes

Serve these cookies with herbal tea or coffee, or enjoy them as a nutritious snack on the go. Add vanilla extract or cinnamon for extra flavor! Store in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
