  • 1 lb ground beef (450 g)
  • 1/2 cup onion, diced (about 75 g)
  • 3 cloves garlic, minced
  • 1/2 cup green bell pepper, diced (75 g)
  • 1/2 cup red bell pepper, diced (75 g)
  • 14.5 oz diced tomatoes (410 g)
  • 3/4 cup white rice (125 g)
  • 2 cups beef broth (480 ml)
  • 2 tbsp tomato paste (30 g)
  • 1 tsp Italian seasoning (1 g)
  • 1/2 tsp salt (3 g)
  • 1/4 tsp black pepper (1 g)
  • 1 1/2 cups cheese, shredded (170 g)
  • 1 tbsp parsley, chopped

Method
 

Preparation
  1. Gather all the ingredients to have everything ready for cooking.
Cooking the meat
  1. In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is fully browned and crumbled, about 5-7 minutes. Drain any excess fat.
Adding vegetables
  1. Into the skillet with the browned meat, add the diced green and red bell peppers. Stir well.
Combining ingredients
  1. Add the diced tomatoes, white rice, beef broth, tomato paste, Italian seasoning, salt, and black pepper to the skillet.
Simmering
  1. Bring the mixture to a boil, then reduce heat to a simmer. Cover the skillet and let it cook for about 18 minutes, or until the rice is fluffy and cooked through.
Final touches
  1. Remove the cover and fluff the rice with a fork. Sprinkle the shredded cheese on top, cover the skillet again, and allow the cheese to melt over low heat for about 2-3 minutes.

  1. Once the cheese is melted, remove from heat, garnish with chopped parsley, and enjoy!
