  • 1 cup plain Greek yogurt (245 g)
  • ½ cup unsweetened applesauce (120 g)
  • 2 large eggs
  • 1 tsp vanilla extract (5 ml)
  • ½ tsp baking soda (2 g)
  • 1 pinch salt

Preparation
  1. Preheat oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. In a bowl, whisk together Greek yogurt, applesauce, eggs, and vanilla until smooth.
  3. Add cocoa powder, baking soda, and salt. Mix until just combined; the batter will be thick.
  4. Spread the batter evenly into the prepared pan.
Baking
  1. Bake for 20–25 minutes, until set but still slightly fudgy in the center.
  2. Let cool completely before slicing into squares.

Notes

Serve these brownies warm with a dollop of Greek yogurt, a drizzle of nut butter, or alongside fresh berries for an elevated experience. They can also be paired with a scoop of your favorite ice cream for a decadent dessert. Stored in an airtight container, they last up to 3 days at room temperature or about a week in the refrigerator. For longer storage, consider freezing them.
