  • 2 cups Greek yogurt (about 500g)
  • 4 large eggs
  • 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, or maple syrup)
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
Dry ingredients
  • 2 tbsp cornstarch or coconut flour
  • 1 1/2 cups blueberries (fresh or frozen)

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the Greek yogurt, eggs, sweetener, vanilla extract, and lemon zest if using. Whisk together until the mixture is smooth and well combined.
  3. Sprinkle in the cornstarch or coconut flour. Whisk again until the batter is lump-free and slightly thickened.
  4. Gently fold the blueberries into the batter, being careful not to break them apart too much.
  5. Pour the batter into the prepared baking dish. Spread it out evenly.
  6. Bake in the preheated oven for 35 to 40 minutes, or until the center is set and the edges turn lightly golden.
  7. Once done, let the bake cool for 10 to 15 minutes before slicing into squares.
Serving
  1. Serve warm or chilled, depending on your preference.
  2. Dust with powdered sweetener for a touch of sweetness.
  3. Top with extra blueberries or a dollop of Greek yogurt for an added creamy texture.
