  • 1.5 pounds 1 1/2 pounds (680 g) boneless skinless chicken thighs
  • 1 teaspoon 1 teaspoon (5 g) onion powder
  • 1 teaspoon 1 teaspoon (5 g) garlic powder
  • 0.5 teaspoon 1/2 teaspoon (1 g) dried thyme
  • 0.5 teaspoon 1/2 teaspoon (1 g) dried rosemary
  • 0.5 teaspoon 1/2 teaspoon (3 g) salt
  • 0.25 teaspoon 1/4 teaspoon (1 g) cracked pepper
  • 0.75 teaspoon 3/4 teaspoon (2 g) paprika
  • 2 tablespoons 2 tablespoons (30 ml) olive oil
  • 1 tablespoon 1 tablespoon (14 g) butter
  • 8 ounces 8 ounces (227 g) brown mushrooms, sliced
  • 4 cloves 4 cloves garlic, minced
  • 1 tablespoon 1 tablespoon (15 g) fresh parsley, chopped
  • 0.5 cup 1/2 cup (120 ml) dry white wine or chicken broth Substitute with chicken broth if preferred.

Method
 

Preparation
  1. Pat chicken thighs dry with a paper towel and trim off excess fat.
  2. In a small bowl, combine the onion powder, garlic powder, dried thyme, dried rosemary, salt, cracked pepper, and paprika.
  3. Coat the chicken evenly with the seasoning mixture.
Cooking
  1. Heat 1 tablespoon of olive oil in a large pan or skillet over medium-high heat.
  2. Sear chicken thighs in batches until browned on each side and no longer pink in the center (about 8 minutes on each side). Transfer to a plate and keep warm.
  3. In the same pan, melt the butter. Add sliced mushrooms and cook until soft (about 3 minutes).
  4. Add minced garlic, fresh parsley, dried thyme, and dried rosemary; sauté until fragrant (about 1 minute).
  5. Pour in the wine or chicken broth and let it simmer until reduced by half.
  6. Return the chicken thighs to the pan, taste the sauce, and season with additional salt and pepper to your liking.
  7. Garnish with fresh parsley and serve immediately.

Notes

Garlic Mushroom Chicken Thighs can be served over a bed of creamy mashed potatoes, fluffy rice, or even pasta to soak up the delicious sauce. Serve alongside steamed vegetables or a fresh green salad for a complete meal. Don’t forget to drizzle some of the savory sauce over the chicken before serving for added flavor.
