Preparation
- Pat chicken thighs dry with a paper towel and trim off excess fat.
- In a small bowl, combine the onion powder, garlic powder, dried thyme, dried rosemary, salt, cracked pepper, and paprika.
- Coat the chicken evenly with the seasoning mixture.
Cooking
- Heat 1 tablespoon of olive oil in a large pan or skillet over medium-high heat.
- Sear chicken thighs in batches until browned on each side and no longer pink in the center (about 8 minutes on each side). Transfer to a plate and keep warm.
- In the same pan, melt the butter. Add sliced mushrooms and cook until soft (about 3 minutes).
- Add minced garlic, fresh parsley, dried thyme, and dried rosemary; sauté until fragrant (about 1 minute).
- Pour in the wine or chicken broth and let it simmer until reduced by half.
- Return the chicken thighs to the pan, taste the sauce, and season with additional salt and pepper to your liking.
- Garnish with fresh parsley and serve immediately.
Notes
