French Onion Chicken Bake

  • 6 pieces skinless, boneless chicken breasts, raw Each chicken breast should weigh approximately 4 oz.
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp seasoned salt
  • 2 Tbsp Land O’Lakes light butter made with canola oil For sautéing the onions.
  • 1 piece yellow onion, peeled & sliced
  • 1 can French onion soup (10 oz.) Campbell’s recommended.
  • 1 cup low sodium beef broth
  • 1/2 cup fat-free or light mozzarella Market Pantry reduced-fat mozzarella is suggested.

Method
 

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a skillet, melt the butter over medium heat and add the sliced onions. Sauté until softened and translucent, about 5 minutes, then remove from skillet.
  3. Spray the skillet with non-stick cooking spray. Season each chicken breast with paprika, garlic powder, and seasoned salt.
  4. Cook the seasoned chicken breasts in the skillet for about 5-7 minutes on medium-high heat until both sides are golden brown.
  5. Return the sautéed onions to the skillet and pour in the French onion soup and beef broth. Let simmer for 2-3 minutes.
  6. Sprinkle the mozzarella cheese on top of each chicken breast.
Baking
  1. Place the skillet or transfer to an oven-safe baking dish and bake in the preheated oven for about 10-15 minutes until bubbly and cheese is melted.
Serving
  1. Serve by lifting each chicken breast onto a plate along with a spoonful of the onion sauce. Pair with steamed vegetables, salad, or crusty bread.

Notes

For added flavor, include a dash of cayenne pepper or chili flakes while seasoning the chicken. Optionally sauté mushrooms with the onions for an earthy flavor. For a cheesier topping, mix grated Parmesan with mozzarella.
