Ingredients
  

For the cake
  • 6 medium medium apples (firm, crisp variety like Golden Delicious, Pink Lady, or Honeycrisp)
  • 2 large large eggs
  • ¼ cup granulated sugar 50 g
  • 2 tbsp brown sugar
  • ½ cup all-purpose flour 60 g
  • ½ tsp baking powder
  • ½ cup whole milk 120 ml
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 2 tbsp sliced almonds (for topping)
  • Powdered sugar (for dusting) as needed

Method
 

Preparation
  1. Peel, core, and slice the apples very thinly. Set aside in a large bowl.
  2. In another bowl, whisk the eggs with both sugars until light and fluffy.
  3. Mix in the melted butter, whole milk, and vanilla extract until well combined.
  4. Sift in the flour, baking powder, and salt. Whisk until smooth and free of lumps.
  5. Gently fold in the apple slices, ensuring they are just lightly coated with the batter.
  6. Preheat the oven to 350°F (175°C) and grease and line a loaf or square pan with parchment paper.
  7. Pour the apple mixture into the prepared pan, pressing lightly to arrange the apples neatly.
  8. Sprinkle the sliced almonds on top.
  9. Bake for 45-50 minutes until the cake is golden brown and set.
  10. Cool completely before slicing and dust with powdered sugar before serving.

Notes

For an extra touch, serve with whipped cream, vanilla ice cream, or a light drizzle of caramel sauce. Experiment with apple varieties and spices like cinnamon or nutmeg for added flavor. This cake stores well in the fridge for up to 3 days.
