  • 2 cups rolled oats 200g
  • 2 pieces ripe bananas
  • 2 cups applesauce 480g
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped apples 75g
  • 1/4 cup maple syrup (optional, 60ml)
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch cake pan.
  2. In a blender, combine rolled oats, bananas, applesauce, cinnamon, baking powder, baking soda, and salt. Blend until smooth and creamy.
  3. Stir in chopped apples, maple syrup (if desired), and vanilla extract, mixing well.
  4. Pour the batter into the prepared cake pan and spread it out evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center.
  2. Let the cake cool in the pan for a few minutes before transferring it to a wire rack. Slice and serve warm or at room temperature.

Notes

Serve slices warm with yogurt or whipped cream, enjoy for breakfast with tea or coffee, or add fresh fruits for a colorful platter. For added texture, fold in nuts before baking. Adjust sweetness with more maple syrup or honey, or add nutmeg for spiciness.
