Dry Ingredients
  • 1 cup all-purpose flour (120 grams)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
Fruits
  • 2 pounds apples (choose a mix of your favorite varieties)
Wet Ingredients
  • 3 large eggs
  • 1 cup granulated sugar (200 grams)
  • 3 ½ tablespoons rum (49 grams; substitute with apple juice if preferred)
  • ¾ teaspoon vanilla extract
  • 10 tablespoons unsalted butter (melted and cooled; 142 grams)

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan with butter or line it with parchment paper.
  2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Peel, core, and thinly slice the apples.
Mixing
  1. In a large mixing bowl, whisk the eggs for about 1-2 minutes until frothy. Mix in the sugar, rum (or apple juice), and vanilla extract, whisking for another minute.
  2. Gradually whisk in half of the flour mixture, blending in half of the melted butter. Repeat with the remaining flour and butter until smooth.
  3. Gently fold in the sliced apples until they are fully coated.
Baking
  1. Pour the apple batter into the prepared pan, smoothing the top.
  2. Place the cake in the oven and bake for 60 to 70 minutes, or until golden brown and a toothpick comes out clean from the center.
  3. Allow to cool for about 5 to 10 minutes before removing from the pan.
Serving
  1. Dust with powdered sugar, serve with whipped cream or ice cream, or enjoy with coffee or tea.

Notes

For best flavor, mix different apple varieties. Use cooled melted butter to prevent cooking the eggs. Store leftovers in an airtight container at room temperature for up to three days or in the fridge for a week.
