Ingredients

Dry Ingredients
  • 2 tbsp cocoa powder (15 g)
  • 2 tbsp almond flour (15 g)
  • 1/4 cup erythritol (or other dry granulated sweetener) (50 g)
  • 1/4 cup unflavored whey protein (30 g)
  • 1/8 tsp baking powder
  • Dash none salt
Wet Ingredients
  • 1 none egg
  • 2 tbsp almond milk (or other milk) (30 ml)
  • 1 tbsp melted coconut oil (or butter or other oil) (15 g)
  • 1/8 tsp vanilla extract

Method

Preparation
  1. Start by gathering all of your ingredients together.
  2. Add all of the dry ingredients into a large mug including the cocoa powder, almond flour, whey protein, sweetener, baking powder, and salt. Mix them together well.
  3. Add the wet ingredients into the mug: the egg, almond milk, melted coconut oil, and vanilla extract. Mix until the mixture is smooth.
  4. Ensure there is plenty of room above the batter in the mug so that the cake can expand in the microwave. Aim to fill the cup halfway with the batter.
Cooking
  1. Microwave on high for 2 minutes, adjusting time as necessary based on your microwave.
  2. After 2 minutes, insert a toothpick or butter knife into the cake to check for doneness—ensure it comes out dry. If it’s not fully cooked, microwave in 30-second increments until it is fully cooked.
Serving
  1. Optionally, drizzle peanut butter on top or add another topping of your choice. Enjoy it warm.

Notes

This mug cake is perfect as a post-workout snack or a late-night treat. Pair with a drizzle of peanut butter, Greek yogurt, or nuts for added texture.
