  • 4-5 medium medium apples, peeled and cored Choose sweet-tart varieties like Braeburn or Pink Lady.
  • 4 large eggs
  • 4 tbsp cocoa powder
  • 1 tbsp honey (or stevia/sugar to taste)
  • 3 tbsp oil (vegetable, coconut or melted butter)
  • 1 tsp baking powder
  • 1 tsp flavour extract (optional) e.g., vanilla, almond, or orange
  • to taste chopped nuts or topping (optional) e.g., walnuts, hazelnuts or seeds

Preparation
  1. Start by peeling and coring the apples.
  2. In a blender, combine the prepared apples, eggs, cocoa powder, honey, oil, and baking powder. Blend until you have a thick, glossy batter.
  3. If you’re looking to enhance the flavor, stir in a splash of vanilla, almond, or orange extract.
  4. Line a round cake pan with parchment paper and lightly grease it.
Baking
  1. Pour the blended mixture into the prepared pan and tap it gently on the counter to remove any air bubbles.
  2. For an extra crunch, sprinkle some chopped nuts, seeds, or a dusting of cocoa on top before baking.
  3. Place your cake in a preheated oven at 185 degrees C (365 degrees F) and bake for about 55 minutes.
  4. Once baked, let the cake cool completely in the pan.
  5. Cover the cake loosely and chill it overnight for the best flavor and texture.
Serving
  1. Slice the cake into 8 servings and serve it chilled or at room temperature.
