  • 4 medium potatoes, diced (about 1.5 lbs or 680g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon garlic powder (5g)
  • 1 teaspoon paprika (5g)
  • Salt and pepper to taste
  • Fresh herbs (such as rosemary or thyme) for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, garlic powder, paprika, salt, and pepper.
  3. Add the chicken thighs to the bowl and toss until they are well coated with the seasoning mixture.
  4. In a roasting pan, arrange the diced potatoes and place the seasoned chicken thighs on top.
Cooking
  1. Roast in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  2. Garnish with fresh herbs before serving.

Notes

For an extra burst of flavor, marinate the chicken thighs in the olive oil and seasonings for a few hours or overnight. You can also add your favorite vegetables such as carrots or Brussels sprouts and adjust the cooking time as needed. For crispy chicken skin, broil the dish for the last 2-3 minutes of cooking, watching closely.
