Preparation
- Preheat your oven to 425°F (220°C).
- Squeeze all of the juices out of the grated zucchini using a clean kitchen towel or cheesecloth.
- In a large bowl, mix together the grated zucchini, mozzarella cheese, Parmesan cheese, egg, and garlic parsley salt until well combined.
- Line a baking dish with parchment paper. Spoon the zucchini mixture onto the lined dish, spreading it out into a thin layer—around half an inch thick.
- Bake the crust in the preheated oven for 15 minutes, or until it starts to turn golden brown.
- Once baked, sprinkle your choice of cheese on top of the zucchini crust.
- Return the baking dish to the oven and bake for an additional 2-5 minutes, or until the cheese is melted and bubbly.
- Allow the cheesy zucchini breadsticks to cool slightly, then slice into sticks and serve warm.
