Ingredients
  

Flatbread Base
  • 4-6 pieces pre-made flatbreads (store-bought or homemade)
Carrot Mixture
  • 2 medium carrots, peeled and finely grated
  • 1 cup shredded mozzarella cheese or melting cheese (about 120g)
  • 1/2 cup shredded cheddar cheese (about 60g)
  • 1/4 cup chopped fresh parsley or cilantro (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin powder
  • to taste salt and black pepper
Topping
  • 1/4 cup grated Parmesan cheese (about 25g)
  • to taste Fresh arugula or microgreens (optional for garnish)

Method
 

Preparation
  1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper or grease it lightly.
  2. In a mixing bowl, combine the grated carrots, mozzarella cheese, cheddar cheese, parsley or cilantro (if using), garlic powder, cumin powder, salt, and black pepper. Stir until evenly mixed.
Baking
  1. Place the flatbreads on the baking sheet and divide the carrot mixture among them, covering the surface while leaving a small border.
  2. Sprinkle each flatbread with grated Parmesan cheese.
  3. Bake for 10 to 12 minutes until the cheese is bubbly and golden. Optionally broil for 1 to 2 minutes for an extra golden finish.
Serving
  1. Allow to cool slightly, slice, and garnish with arugula or microgreens if desired. Enjoy!

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the carrot mixture. You can also sneak in finely chopped spinach or bell peppers for added nutrition.
