Ingredients
  

For the batter
  • 200 grams cow's cheese
  • 200 grams yogurt
  • 200 grams yellow cheese grated
  • 2 pieces eggs
  • 170 grams melted butter
  • 125 milliliters fresh cow's milk
  • 140 grams flour sifted
  • 1/2 teaspoon baking powder
  • a pinch oregano
  • a pinch black pepper
  • a little oil for greasing

Method
 

Preparation
  1. Sift the flour together with the baking powder and black pepper into a medium bowl.
  2. Melt the butter until it’s completely liquid and let it cool slightly.
  3. In a separate larger bowl, beat the eggs together with the fresh cow's milk until well combined.
  4. Stir in the yogurt and melted butter into the egg mixture, mixing until smooth.
  5. Gradually add the flour mixture to the wet ingredients, beating until the batter is lump-free.
  6. Crumble the cow's cheese with your hands and add it to the mixture. Grate the yellow cheese and fold it in using a spatula.
  7. Line a 20 x 30 cm (8 x 12 inch) baking tin with baking paper and lightly grease it with a bit of oil.
  8. Pour the mixture into the prepared baking tin, spreading it evenly.
Baking
  1. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 40 minutes or until the top is golden brown.
  2. Once ready, remove the bake from the oven, let it cool for a bit, then slice it into squares and serve warm.

Notes

For variations, you can mix different types of cheese, add cooked spinach or grated zucchini for more nutrition, and use fresh herbs for flavor.
