Ingredients
  

Main Ingredients
  • 1 piece cooked cauliflower, finely chopped or lightly mashed (approximately 400g)
  • 3 pieces eggs
  • 4 tablespoons all-purpose flour (about 60g, more if necessary)
  • salt and pepper to taste
  • 1 teaspoon paprika
  • 1 piece spring onion, finely chopped
  • 2 cloves garlic, pressed
  • 100 grams hard cheese, grated (about 1 cup)

Method
 

Preparation
  1. Finely chop or lightly mash the cooked cauliflower in a large bowl.
  2. Add the eggs, flour, salt, pepper, and paprika to the cauliflower. Mix well to combine.
  3. Incorporate the chopped spring onion, pressed garlic, and grated hard cheese into the mixture. Stir until you achieve a cohesive batter. If the batter is too thin, add more flour.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Using a spoon, form small patties from the batter and place them in the hot pan.
  3. Cook on both sides until golden brown, about 3-4 minutes per side.
  4. Serve warm with your favorite dipping sauce or as a side dish.

Notes

Cauliflower pancakes can be served with a salad, topped with sour cream or yogurt, or alongside poached eggs. They also make excellent appetizers or side dishes.
