  • 1/3 cup liquid-state coconut oil (or canola/vegetable oil) (80 ml)
  • 1/4 cup granulated sugar (50 g)
  • 1/4 cup sour cream (or Greek yogurt) (60 ml)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground nutmeg
Dry Ingredients
  • 1 cup all-purpose flour (125 g)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt (optional)
Main Ingredients
  • 3/4 cup grated carrots (about 1 large carrot, 90 g)
  • 3/4 cup grated apples (1 medium Fuji or similar, 90 g)

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Spray a 9×5-inch (23×13 cm) loaf pan with floured cooking spray or grease and flour it.
  2. In a large bowl, whisk together the egg, brown sugar, coconut oil, granulated sugar, sour cream, vanilla extract, cinnamon, and nutmeg until well combined.
  3. Add the flour, baking powder, baking soda, and optional salt to the mixture, and stir gently until just combined.
  4. Fold in the grated carrots and apples until evenly distributed throughout the batter.
  5. Pour the thick batter into the prepared pan, smoothing the top with a spatula.
Baking
  1. Bake for 45-52 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
  2. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
