  • 1 tablespoon 1 tablespoon apricot jam For glossy finish
For the Cake Batter
  • 3 pieces 3 eggs Large eggs
  • 3/4 cup 3/4 cup (150 g) sugar For the batter
  • 1 pinch Pinch of salt To balance sweetness
  • 1 packet 1 packet (0.6 oz or 17g) vanilla sugar For extra flavor
  • 1/2 cup 1/2 cup (120 ml) oil Vegetable or canola oil
  • 2/3 cup 2/3 cup (160 ml) milk To create batter
  • 2 cups 2 cups (250 g) flour All-purpose flour
  • 2 tablespoons 2 tablespoons baking powder For leavening

Method
 

Preparation
  1. Thinly slice the apple and drizzle lemon juice over the slices to keep them fresh.
Caramelizing Apples
  1. Melt the butter with the sugar in a non-stick pan over medium heat until bubbly.
  2. Add the apple slices and cook until they are golden brown and caramelized.
  3. Sprinkle in cinnamon and stir in apricot jam for a glossy finish. Set aside.
Making the Batter
  1. In a large bowl, beat the eggs with sugar and salt until foamy.
  2. Add the vanilla sugar, oil, and milk, mixing until smooth.
  3. Sift in flour and baking powder over the wet mixture and stir until smooth.
Assembly and Baking
  1. Pour the batter into a cake pan, spreading it evenly.
  2. Arrange the caramelized apple slices on top in a decorative manner.
  3. Preheat oven to 180 degrees C (356 degrees F) and bake for 20-25 minutes until golden brown.
Cooling and Serving
  1. Allow pie to cool for a few minutes before dusting with powdered sugar.

Notes

For the best flavor, use a mix of apple varieties. Consider adding nuts to the caramelized apples for crunch. You can also swap cinnamon with nutmeg or allspice for a flavor twist.
