Ingredients
  

For the Base
  • 80 pieces club crackers (approximately 280g)
  • 1 cup butter (226g)
  • 2 cups graham cracker crumbs (200g)
  • 1 cup brown sugar (220g)
  • 1/2 cup milk (120ml)
  • 1/3 cup sugar (67g)
For the Topping
  • 2/3 cup creamy peanut butter (160g)
  • 1/2 cup semisweet chocolate morsels (90g)
  • 1/2 cup butterscotch morsels (90g)

Method
 

Preparation
  1. Line an ungreased 9X13-inch (23×33 cm) baking pan with foil, leaving an extension of foil on either end for easy removal.
  2. Arrange 1 layer of club crackers in the foil-lined pan, cutting to fit if necessary.
Making the Base
  1. In a large saucepan, melt 1 cup (226g) butter over medium heat.
  2. Add 2 cups (200g) graham cracker crumbs, 1 cup (220g) brown sugar, 1/2 cup (120ml) milk, and 1/3 cup (67g) sugar to the melted butter.
  3. Bring the mixture to a boil and boil for 5 minutes, stirring constantly.
  4. Remove the saucepan from heat and spread half of the butter mixture evenly over the layer of crackers in the pan.
  5. Place another single layer of club crackers evenly over the butter mixture, cutting to fit if necessary.
  6. Spread the remaining half of the butter mixture evenly over this second layer of crackers.
  7. Top evenly with the remaining club crackers.
Making the Topping
  1. In a small saucepan (or in the microwave), combine 2/3 cup (160g) creamy peanut butter, 1/2 cup (90g) semisweet chocolate morsels, and 1/2 cup (90g) butterscotch morsels.
  2. Melt the mixture over medium-low heat, stirring constantly until smooth.
  3. Spread the melted mixture evenly over the top layer of crackers.
Chilling and Serving
  1. Cover the pan and chill in the refrigerator for at least 1 hour.
  2. Once chilled, lift the foil overhang to remove bars from the pan.
  3. Cut into bars and store in the refrigerator.
