Preparation
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 13×9 inch (33×23 cm) pan and set it aside.
- In a large bowl, combine the crust ingredients: 2 cups of all-purpose flour, 1/2 cup packed brown sugar, and 3/4 cup cold cubed butter. Blend until it resembles coarse crumbs and press into the bottom of the prepared pan.
- In another bowl, beat the filling ingredients: softened cream cheese, 1/2 cup plus 2 tablespoons of white sugar, and 1 teaspoon of vanilla extract until smooth. Add the lightly beaten eggs one at a time, mixing well after each addition. Fold in chopped apples, cinnamon, and nutmeg. Pour over the crust in the pan.
- For the streusel topping, mix together flour, brown sugar, white sugar, and oats. Add cold butter and mix until it resembles coarse crumbs. Sprinkle topping evenly over the apple cheesecake filling.
Baking
- Place the pan in the preheated oven and bake for 45-50 minutes or until the streusel topping is golden brown and the filling is set. Allow the bars to cool completely in the pan.
- Drizzle the caramel topping over the cooled bars before cutting into squares.
Notes
Caramel Apple Cheesecake Bars are best served chilled or at room temperature. They pair wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
