  • 1 medium butternut squash (about 2 lbs)
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash into 1-inch pieces.
  3. Toss the cubed squash in a bowl with olive oil, brown sugar, salt, black pepper, and cinnamon.
  4. Spread the squash evenly on a baking sheet lined with parchment paper.
Cooking
  1. Roast in the oven for 25-30 minutes or until tender and caramelized, stirring halfway through for even cooking.
  2. Serve warm and enjoy!

Notes

For serving, pair with roasted chicken or grilled steak, add to salads, or combine in grain bowls. Garnish with fresh herbs.
