Ingredients
  

Vegetables and Feta
  • 2 cups cherry or grape tomatoes
  • 1 medium red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese, crumbled
  • 4 tablespoons olive oil
Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
Final Touch
  • 1 cup chopped baby spinach
  • 4 large eggs
  • to taste fresh basil or chives (optional for topping)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. If using ramekins, divide the tomatoes, bell pepper, red onion, garlic, and feta cheese among four oven-safe dishes. Drizzle 1 tablespoon of olive oil over each dish.
  3. If using one large dish, combine the tomatoes, bell pepper, red onion, and garlic in the dish, placing the feta in the center. Drizzle the olive oil over the feta and veggies.
  4. In a small bowl, mix the dried oregano, salt, dried thyme, black pepper, and red pepper flakes.
  5. Sprinkle the spice mixture evenly over the feta and veggies.
Baking
  1. Place the ramekins on a baking sheet or place the large dish directly in the oven. Bake for 25 minutes.
  2. Once baked, remove from the oven and stir everything together to combine the feta with the veggies. Add the chopped spinach.
  3. Create a well in the center of each ramekin or in the large dish. Crack an egg into each well.
  4. Return the dishes to the oven and bake for an additional 10 minutes, or until the eggs reach your desired level of doneness.
Serving
  1. Top with fresh herbs like basil or chives before serving, if desired.
  2. Serve right out of the oven with crusty baguette slices, toast, or warm pita.

Notes

You can mix in other vegetables, such as zucchini or mushrooms, to customize the dish. If you're not a fan of feta, consider goat cheese or cream cheese as alternatives. You can prepare the veggie and feta mixture ahead of time. Just add the eggs and bake when ready to serve.
