Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour (250g)
  • ¼ cup granulated sugar (50g)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
Wet Ingredients
  • ½ cup whole milk (120ml)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups diced apples (Granny Smith or Honeycrisp) (about 240g)
  • 2 tablespoons melted butter (30g)
Glaze Ingredients
  • 1 cup powdered sugar (120g)
  • 2-3 tablespoons milk (for glaze) (30-45ml)
  • ½ teaspoon vanilla extract (for glaze)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, combine the milk, eggs, and vanilla extract. Once mixed, pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to over-mix.
  4. Gently fold in the diced apples and melted butter until they are evenly distributed throughout the batter.
Baking
  1. Drop spoonfuls of the batter onto the prepared baking sheet, shaping them into small mounds.
  2. Bake for 15-18 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
Glazing
  1. While your fritters are baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  2. Allow the fritters to cool for about 5 minutes before drizzling the glaze over them.

Notes

Serve warm for the best flavor. They pair nicely with coffee or tea, and consider adding a sprinkle of extra cinnamon or serving with vanilla ice cream.
