Preparation
- Peel, core, and slice the apples into small chunks.
- In a pan over medium heat, melt the butter. Add the diced apples, sugar, and cinnamon. Cook until the apples are softened and lightly caramelized, about 8-10 minutes. Let the mixture cool completely.
Assembly
- On a lined baking sheet, roll out the puff pastry into a rectangle.
- Spread the apricot jam evenly over the puff pastry.
- Sprinkle the crushed amaretti cookies over the jam.
- Distribute the cooled apple mixture evenly over the top.
- Shape the pastry around the filling as desired.
- In a bowl, beat the egg yolk with the milk and brush over the pastry.
- Generously sprinkle almond flakes on top.
- Preheat oven to 180 degrees C (350 degrees F) and bake for about 25 minutes, or until puffed and golden brown.
- Allow to cool slightly before serving.
Notes
Serve warm, sliced into squares or wedges. Can dust with powdered sugar or serve with ice cream or whipped cream.
