Ingredients
  

For the apple filling
  • 2 pieces apples (peeled, cored, and diced) Choose a mix of sweet and tart apples like Granny Smith and Honeycrisp.
  • 2 tablespoons sugar Adjust to taste.
  • a little to taste cinnamon Used to flavor the apples.
  • 1 tablespoon butter For cooking the apples.
For the pastry assembly
  • 1 sheet puff pastry (thawed) Roll out to a rectangle on a lined baking sheet.
  • 1 tablespoon apricot jam Spread evenly over puff pastry.
  • a few pieces amaretti cookies, crushed Add a crunchy texture.
  • 1 piece egg yolk For egg wash.
  • 1 teaspoon milk For mixing with egg yolk.
  • to taste almond flakes For topping.

Method
 

Preparation
  1. Peel, core, and slice the apples into small chunks.
  2. In a pan over medium heat, melt the butter. Add the diced apples, sugar, and cinnamon. Cook until the apples are softened and lightly caramelized, about 8-10 minutes. Let the mixture cool completely.
Assembly
  1. On a lined baking sheet, roll out the puff pastry into a rectangle.
  2. Spread the apricot jam evenly over the puff pastry.
  3. Sprinkle the crushed amaretti cookies over the jam.
  4. Distribute the cooled apple mixture evenly over the top.
  5. Shape the pastry around the filling as desired.
  6. In a bowl, beat the egg yolk with the milk and brush over the pastry.
  7. Generously sprinkle almond flakes on top.
  8. Preheat oven to 180 degrees C (350 degrees F) and bake for about 25 minutes, or until puffed and golden brown.
  9. Allow to cool slightly before serving.

Notes

Serve warm, sliced into squares or wedges. Can dust with powdered sugar or serve with ice cream or whipped cream.
