Preparation
- Peel and chop the two apples, then blend them into a smooth puree.
- In a large bowl, combine the apple puree with oat flakes and eggs. Let the oats soak for a few minutes.
- Stir in 1 tablespoon of baking powder until fully combined.
- Line an 18 cm (7 inch) tin with parchment paper, including the sides.
- Pour the oat-apple mixture into the tin and spread it out evenly.
- Decorate the top with cranberries and walnuts, pressing them lightly into the surface.
Baking
- Preheat your oven to 180°C (356°F).
- Bake in the preheated oven for about 40-45 minutes, or until the top is golden and the pie is firm.
- Check doneness with a toothpick; it should come out clean.
- Allow the pie to cool in the tin for about 15 minutes, then transfer to a wire rack.
Serving
- Serve warm or refrigerate for later. Note that the flavors deepen the next day.
Notes
For a sweeter pie, consider adding honey or maple syrup to the apple puree. You can also spice it up with cinnamon or nutmeg. Feel free to mix in additional nuts or seeds for added texture.
