Ingredients
  

For the Pancake Batter
  • 2 large large eggs
  • 2 tablespoons sugar
  • 1 pinch salt
  • 250 ml Kefir (or buttermilk)
  • 250 g Semolina
  • 1 teaspoon baking soda
For the Fruit Filling
  • 2-3 medium Apples (or other fruits of your choice) Peeled, cored, and diced.
  • 1 tablespoon sugar To sprinkle on the fruits while cooking.
  • 1 tablespoon butter For cooking the filling.

Method
 

Preparation
  1. Break the eggs into a mixing bowl. Add sugar and a pinch of salt. Optionally, add a splash of vanilla extract.
  2. Pour in the Kefir and mix well until sugar is dissolved.
  3. Stir in the baking soda into the mixture.
  4. Gradually incorporate the semolina into the batter until well mixed.
  5. Knead in cottage cheese (if using) until the mixture is smooth.
  6. Prepare the fruit filling by peeling, coring, and dicing the apples.
  7. Melt a spoonful of butter in a separate pan, add the diced apples, sprinkle with sugar, and let them simmer for 3-4 minutes until tender and caramelized.
Cooking
  1. Transfer the pancake batter into a pastry bag or a plastic bag with a corner snipped off.
  2. Heat a frying pan over medium heat and grease lightly with butter.
  3. Squeeze small portions of the batter onto the pan to form pancakes, adding a spoonful of the caramelized apple filling on top.
  4. Cover the apples with another layer of batter and cook until golden brown and crispy on both sides.

Notes

For serving, drizzle with maple syrup or honey, and garnish with whipped cream or a dusting of powdered sugar. You can swap the apples for pears, peaches, or berries based on seasonal availability.
