Preparation
- Preheat your oven to 175°C (350°F) and line a 9-inch springform pan with parchment paper.
- If using whole oats, blend them into a coarse flour, or simply mix different types for a varied texture in your cake.
- In a mixing bowl, combine the oats, sugar, and ground cinnamon thoroughly.
- In another bowl, toss the grated apples with fresh lemon juice to prevent browning and add brightness to the flavors.
Layering
- Start with a layer of grated butter at the bottom of the pan.
- Next, add a layer of the oat mixture.
- Then top with a layer of the grated apples, pressing each layer down gently.
- Repeat the layering process two more times: butter, oat mix, and then apples, finishing with a final layer of the oat mixture and grated butter.
Baking
- Sprinkle the 1 tbsp of sugar over the top for some delicious caramelization while baking.
- Bake in your preheated oven for about 35–45 minutes, or until the cake is golden brown and bubbling.
- Once baked, allow it to cool for about 20 minutes before gently removing it from the springform pan.
Serving
- Serve warm or at room temperature, and feel free to add toppings of your choice like whipped cream, yogurt, or even a drizzle of caramel sauce.
Notes
For a gluten-free option, use certified gluten-free oats. Add nuts or seeds for extra crunch and nutrition. Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
