Ingredients
  

For the Cake
  • 6 large apples, peeled and grated Mix of tart and sweet apples recommended.
  • 2–3 tbsp fresh lemon juice To prevent browning of apples.
  • 4 cups old-fashioned oats or oat flour Blended oats can be used for varied texture.
  • cup unsalted butter, cold and grated For layering at the bottom.
  • ¾ cup sugar Plus 1 tbsp for topping.
  • 1 tsp ground cinnamon For flavoring the cake.

Method
 

Preparation
  1. Preheat your oven to 175°C (350°F) and line a 9-inch springform pan with parchment paper.
  2. If using whole oats, blend them into a coarse flour, or simply mix different types for a varied texture in your cake.
  3. In a mixing bowl, combine the oats, sugar, and ground cinnamon thoroughly.
  4. In another bowl, toss the grated apples with fresh lemon juice to prevent browning and add brightness to the flavors.
Layering
  1. Start with a layer of grated butter at the bottom of the pan.
  2. Next, add a layer of the oat mixture.
  3. Then top with a layer of the grated apples, pressing each layer down gently.
  4. Repeat the layering process two more times: butter, oat mix, and then apples, finishing with a final layer of the oat mixture and grated butter.
Baking
  1. Sprinkle the 1 tbsp of sugar over the top for some delicious caramelization while baking.
  2. Bake in your preheated oven for about 35–45 minutes, or until the cake is golden brown and bubbling.
  3. Once baked, allow it to cool for about 20 minutes before gently removing it from the springform pan.
Serving
  1. Serve warm or at room temperature, and feel free to add toppings of your choice like whipped cream, yogurt, or even a drizzle of caramel sauce.

Notes

For a gluten-free option, use certified gluten-free oats. Add nuts or seeds for extra crunch and nutrition. Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
