Ingredients
  

For the Apples
  • 3 pieces apples (peeled, cored, and sliced)
  • 2 tablespoons sugar (for the apples)
  • 0.5 pieces juice of half a lemon
For the Cake
  • 3 pieces eggs
  • 140 g sugar (about 3/4 cup)
  • 1 teaspoon vanilla sugar or vanilla extract
  • 1 pinch salt
  • 110 ml milk (about 1/2 cup)
  • 4 tablespoons yogurt or sour cream
  • 90 ml vegetable oil (about 1/3 cup)
  • 1 piece zest of 1 lemon
  • 2 teaspoons baking powder
  • 200-220 g flour (about 8-9 heaped tablespoons)
  • 2-3 tablespoons melted butter (for brushing or topping)

Method
 

Preparation
  1. Peel, core, and slice the apples into thin wedges. Toss them with 2 tablespoons of sugar and the juice of half a lemon. Let them sit for 5-10 minutes.
  2. Preheat your oven to 180 degrees C. Grease a baking pan to prevent sticking.
Mixing Wet Ingredients
  1. In a large mixing bowl, whisk together the eggs, 140 g sugar, vanilla sugar, and a pinch of salt until the mixture is light and fluffy.
  2. Gradually add the milk, yogurt, and vegetable oil, stirring continuously. Finally, stir in the lemon zest.
Adding Dry Ingredients
  1. Sift the flour and baking powder into the wet mixture. Carefully fold in the dry ingredients until the batter is smooth.
Assembling the Cake
  1. Pour half of the batter into the prepared baking pan. Layer half of the prepared apples on top. Add the remaining batter, followed by the rest of the apple slices.
Baking
  1. Brush the apples on top with melted butter and sprinkle with additional sugar if desired.
  2. Place the cake in the preheated oven and bake for 40-45 minutes. A toothpick inserted into the center should come out clean when the cake is done.
Cooling and Serving
  1. Once baked, allow the cake to cool slightly before serving. Optionally, dust with powdered sugar for an elegant finish.

Notes

Serve slices of Apple Cake warm or at room temperature, ideally accompanied by whipped cream or vanilla ice cream. For an extra touch, consider drizzling a caramel or vanilla glaze over the top before serving.
